Mike Hale: Re-imagined Schooners impresses
For 14 years, James Waller's pipedream restaurant sat simmering inside his head.
On Saturday the executive chef at the Monterey Plaza Hotel & Spa served his viands his way to a large and curious crowd inside Schooners Coastal Kitchen and Bar, the re-imagined concept at the hotel that ushered out the spent Duck Club while expanding the old Schooners' nautical bistro concept.
"After nearly 15 years of laboring, we truly have something we're proud of," he said. "Frankly, I don't miss the Duck Club."
Waller and food and beverage director Lars Stokkebye definitely convinced management to change — to the tune of an eight-week construction tab of $450,000, along with an extravagant party with Champagne toasts, exposed bar and plenty of Waller's food.
